Long before electric refrigerators became common in homes, people living in hot and dry regions developed a clever way to preserve food naturally. Known as the Zeer pot or pot-in-pot refrigerator, this centuries-old invention uses simple materials and the power of evaporation to keep food cool for longer periods.

The design is remarkably simple. A smaller clay pot is placed inside a larger clay pot, and the space between them is filled with wet sand. As water from the sand slowly evaporates through the porous outer pot, it absorbs heat from the inner chamber. This natural process lowers the temperature inside, helping fruits, vegetables, and drinks stay fresh for several extra days.

Although variations of this cooling method have been used for generations across Africa, the Middle East, and South Asia, it gained global recognition in the 1990s. Nigerian teacher and inventor Mohammed Bah Abba promoted the Zeer pot as an affordable solution for farmers and rural communities without reliable access to electricity. His work earned international praise and the Rolex Award for Enterprise in 2000.

The system performs best in hot, dry climates where evaporation occurs more quickly. Under the right conditions, the temperature inside the inner pot can be significantly cooler than the surrounding air, helping reduce food spoilage and waste.

One of the Zeer pot’s greatest advantages is its sustainability. It requires no electricity, produces no pollution, and can be made using inexpensive, locally available materials. For communities facing limited access to refrigeration, it remains a practical and eco-friendly alternative.

As interest in sustainable living and low-energy technologies continues to grow, this ancient cooling device is attracting renewed attention. Experts often cite the Zeer pot as a powerful example of how traditional knowledge can provide innovative solutions to modern-day challenges.
