Long before electric refrigerators became common in homes, people living in hot and dry regions developed a clever way to preserve food naturally. Known as the Zeer pot or pot-in-pot refrigerator, this centuries-old invention uses simple materials and the power of evaporation to keep food cool for longer periods.
The design is remarkably simple. A smaller clay pot is placed inside a larger clay pot, and the space between them is filled with wet sand. As water from the sand slowly evaporates through the porous outer pot, it absorbs heat from the inner chamber.
