Method
Step 1: Cook The Noodles
Boil the noodles in salted water until they are just cooked. Drain them well, toss with a few drops of oil to prevent sticking and keep aside.
Step 2: Prepare The Base
Heat oil in a deep pan or wok. Add the sliced onions and sauté for about two minutes until slightly softened. Stir in the ginger-garlic paste and chopped tomatoes, cooking until the tomatoes become soft.
Step 3: Add The Vegetables
Add the shredded vegetables and cook on high heat for two minutes. The vegetables should remain slightly crunchy to retain their texture and nutrients.
